Shepherd’s Pi

It was Pi Day yesterday.  It stared out early with some funny, nerdy texts from my sister.

The rest of the day was crazy busy with work and then an afternoon session of tossing the softball back and forth in the driveway with my granddaughter.  Fast-pitch softball practice has begun and I try to keep her throwing and catching a little everyday after work on the days she doesn’t have practice.

But . . . to celebrate the math day, I made a Shepherd’s Pi for dinner.  Recipes and presentations of Shepherd’s Pie vary quite a bit.  I’m not going to post a recipe.  But the three separate segments of Pi will work nicely for three meals for us.  Because the segments were so narrow, the vegetable layer hidden underneath the mashed potatoes, is one of beautiful carrot coins.  Cheese and parsley are atop the spuds.  I made a lemon grass white sauce (gravy) to serve on the side.
